Dry Red Wine – Protected Geographical Indication Ioannina

Clear red colour and a strikingly aromatic bouquet redolent with notes of freshly ground black pepper. Satisfying acidity and soft, round tannins that melt on the palate. Light, balanced, with a delightful peppery aftertaste.
Vinification:
Destemming, crushing and maceration until the end of a 18-day-long fermentation at 20º–25º C, during which the cap was punched down twice per day. The wine was immediately transferred to 300-litre French oak barrels (Nevers, medium toast) to sit on its lees for two months. The wine was then given ten months ageing in cask.
Indigenous grape variety of Epirus, with pleasant acidity, mild tannins and peppery aromatics. Rossiu di Munte means ‘red of the mountain’ in the local Metsovo Vlach dialect. Limited edition wine. Wine of limited circulation.
