Destemming, crushing and maceration until after completion of the 22-day- long fermentation The cap was punched down twice per day during fermentation. Fermentation temperature ranged between 15–25°C; immediately after maceration, the wine was transferred to 300-litre French oak barrels (Nevers, light toast), where it sat on its lees for two months. It was then given 13 months ageing in cask.
Characteristics:
Ruby-red, with a purple sheen. In both aromatics and flavour it preserves the fruity varietal character of Pinot Noir coupled with earthy notes, spice and rose.

Bottling is done without the use of a filter and without prior cooling of the wine.
